What I’m Eating: Sweet Potatoes

Sweet potatoes are another thing that always ends up on the list of superfoods, that I don’t eat enough. I started eating them for lunch a couple times a week and it’s become one of my favorites. All I do is give it a wash, stab it a few times with a fork, wrap it in tinfoil, and toss it in a 350 degree oven. If I do it when I get out of the shower in the morning, by the time I’m ready for lunch it is soft and sweet and gorgeous.

By cooking it this way all the natural sugars caramelize and the potato gets soft and luscious. You don’t have to add a drop of butter or brown sugar to make it scrumptious, that all just comes out naturally when you cook it long enough.
