What I’m Eating – Pickled Tomatoes

I made these pickled green tomatoes in my canning frenzy of last year. I ended up with a TON of green tomatoes and not enough time to wait around for them to ripen, so I searched through the internet for ideas. Most of them were a bust (Tomato Jelly? Weird.) but these pickled tomatoes will stay on the canning agenda. They are absolutely divine on a hamburger, and perfect for that time of day when you could go for a little something but are trying to avoid a fourth-meal. There is a whole lot of flavor in this little vegetable, a great little snack that actually tastes satisfying.
